Equipment

  • Blackstone Griddle
  • Flat Top Grill/ Griddle

Ingredients

  • 3/4 cup mayo
  • 1/2 to 3/4 cup sweet Thai chili sauce
  • 1 to 3 tablespoons sriracha, depending on spice preference
  • 1 to 2 tablespoons lemon juice
  • 2 cups coleslaw mix
  • 1 (8-ounce) can pineapple tidbits, drained well
  • 1 pound jumbo shrimp peeled and deveined
  • cooking oil of choice
  • kosher salt, pepper
  • 1 (12-count) package street taco size flour tortillas

Instructions

  • Put the mayo, sweet chili sauce, sriracha, and lemon juice in a bowl, mix until combined to make the bang bang sauce.
  • Put the coleslaw mix and pineapple in another bowl, add a few spoonfuls of the bang bang sauce and toss until combined.
  • Cut the shrimp into fourths (you could use smaller shrimp but I prefer the quality of the jumbo shrimp).
  • Preheat your griddle to medium heat. Add some cooking oil, shrimp, kosher salt, and pepper. Cook the shrimp 1 to 2 minutes, mixing with spatulas.
  • Add half of the bang bang sauce to the shrimp and cook another 2 to 3 minutes, mixing. Add the tortillas to the griddle for a minute to warm them a bit.
  • Assemble the tacos with the pineapple slaw, shrimp, and remaining bang bang sauce.
