Put the mayo, sweet chili sauce, sriracha, and lemon juice in a bowl, mix until combined to make the bang bang sauce.
Put the coleslaw mix and pineapple in another bowl, add a few spoonfuls of the bang bang sauce and toss until combined.
Cut the shrimp into fourths (you could use smaller shrimp but I prefer the quality of the jumbo shrimp).
Preheat your griddle to medium heat. Add some cooking oil, shrimp, kosher salt, and pepper. Cook the shrimp 1 to 2 minutes, mixing with spatulas.
Add half of the bang bang sauce to the shrimp and cook another 2 to 3 minutes, mixing. Add the tortillas to the griddle for a minute to warm them a bit.
Assemble the tacos with the pineapple slaw, shrimp, and remaining bang bang sauce.
