Blackstone BBQ Chicken Sweet Potato Rice Bowls

Ingredients
  

  • 1 large sweet potato
  • cooking oil of choice
  • 2 boneless, skinless chicken thighs (or chicken breasts) cut into bite size pieces, or leave whole to cook and dice later
  • 1 to 2 ears corn on the cob kernels cut off the cob
  • kosher salt, pepper, BBQ seasoning blend of choice
  • 1 large avocado sliced
  • Toppings of choice: BBQ sauce, hot honey, taco or hot sauce, cilantro, lime wedges to squeeze over top

Instructions
 

  • Note: This was part of my Blackstone Meal Prep Series, so the sweet potato rice, chicken, and corn were already cooked. See post above for meal prep details, or follow cooking directions below.
    Cut the sweet potato, skin on, into chunks and place in a food processor. Pulse a few times until it becomes a rice consistency.
  • Preheat griddle to medium. Add cooking oil to entire griddle and add sweet potato rice to one space, chicken to another space, and corn to a third space on the griddle. Season all with kosher salt, pepper, and BBQ seasoning.
  • Cook everything for 10 minutes, keeping it all separate, flipping and mixing a few times.
  • Remove and assemble the bowls, add to each bowl some sweet potato rice, chicken, corn, avocado, and add toppings of choice such as BBQ sauce, hot honey, taco or hot sauce, cilantro, and/or lime wedges to squeeze over top (I added all of these toppings to mine).
