Blackstone BBQ Chicken Sweet Potato Rice Bowls
This dinner was part of my Blackstone Chicken Sweet Potato and Corn Meal Prep Series, so the sweet potato rice, chicken, and corn were already cooked, but I also included the recipe just for Blackstone BBQ Chicken Sweet Potao Rice Bowls for you!

How to make Blackstone BBQ Sweet Potato Rice Bowls
First cut a sweet potato, skin on, into chunks and place in a food processor.
Pulse a few times until it becomes a rice consistency and cut the kernels off 1 to 2 ears of corn.
Then preheat your Blackstone or flat top griddle to medium.
Add cooking oil to entire griddle and add sweet potato rice to one space, chicken to another space, and corn to a third space on the griddle.
I diced my chicken, but you could leave it whole and dice later if preferred.
Season everything with kosher salt, pepper, and BBQ seasoning and cook for 10 minutes, mixing a few times..

Now we can assemble the bowls!
Add to each bowl some sweet potato rice, chicken, and corn.

Then a sliced avocado, and any toppings of choice.

I loaded mine up with BBQ sauce, hot honey, cilantro lime taco sauce, fresh cilantro, and lime wedges to squeeze over top.

Blackstone BBQ Chicken Sweet Potato Rice Bowls
Equipment
- Blackstone Griddle
- Flat Top Grill/ Griddle
Ingredients
- 1 large sweet potato
- cooking oil of choice
- 2 boneless, skinless chicken thighs (or chicken breasts) cut into bite size pieces, or leave whole to cook and dice later
- 1 to 2 ears corn on the cob kernels cut off the cob
- kosher salt, pepper, BBQ seasoning blend of choice
- 1 large avocado sliced
- Toppings of choice: BBQ sauce, hot honey, taco or hot sauce, cilantro, lime wedges to squeeze over top
Instructions

- Cook everything for 10 minutes, keeping it all separate, flipping and mixing a few times.
- Remove and assemble the bowls, add to each bowl some sweet potato rice, chicken, corn, avocado, and add toppings of choice such as BBQ sauce, hot honey, taco or hot sauce, cilantro, and/or lime wedges to squeeze over top (I added all of these toppings to mine).
