Ingredients
  

  • cooking oil of choice
  • 2 pounds boneless, skinless chicken thighs or breasts cut into bite size pieces
  • kosher salt, pepper
  • 1/4 cup blackberry jam
  • 2 tablespoons lime juice
  • 1 tablespoon soy sauce
  • 1 tablespoon hot honey
  • 1 teaspoon lime zest
  • Optional: chives, goat cheese crumbles, lime wedges

Instructions
 

  • Preheat your griddle to medium heat. Add cooking oil of choice, the chicken, kosher salt, and pepper. Cook 4 minutes, mixing a few times.
  • Add the blackberry jam, lime juice, soy sauce, hot honey, and lime zest. Cook 4 to 5 more minutes, mixing it all together with spatulas.
  • Serve just like this with chives, goat cheese crumbles, and more lime wedges to squeeze over top. Or store in the fridge and use in meal prep such as on salads, wraps, or as a high protein snack.
