Blackstone Blackberry Lime Chicken Bites
This flavorful griddle recipe is pretty healthy and very versatile as far as serving options, let me show you how I made Blackstone Blackberry Lime Chicken Bites.
It’s soooo good by itself topped with goat cheese, or use it on salads, wraps, or rice bowls!

How to make Blackstone Blackberry Lime Chicken Bites
First preheat your Blackstone or flat top griddle over medium heat.
Add cooking oil of choice, 2 pounds diced chicken thighs, kosher salt, and pepper.

Cook the chicken on the griddle for a few minutes, then we are adding some yummy goodness.
Blackberry jam, soy sauce, hot honey, lime juice, and lime zest.

At first it may seem like a lot of the glaze, but it reduces down and caramelizes on the chicken after a few minutes.

Just mix with your spatulas a few times and lower the heat if needed.

You could top Blackstone Blackberry Lime Chicken Bites with goat cheese crumbles if desired!

For my husband and son, they got a slice of toasted ciabatta and a Caesar side salad, with extra lime wedges on the side.
We were lucky enough to have leftovers which were amazing in a wrap for lunch the next day.

Blackstone Blackberry Lime Chicken Bites
Equipment
- Blackstone Griddle
- Flat Top Grill/ Griddle
Ingredients
- cooking oil of choice
- 2 pounds boneless, skinless chicken thighs or breasts cut into bite size pieces
- kosher salt, pepper
- 1/4 cup blackberry jam
- 2 tablespoons lime juice
- 1 tablespoon soy sauce
- 1 tablespoon hot honey
- 1 teaspoon lime zest
- Optional: chives, goat cheese crumbles, lime wedges
Instructions
- Preheat your griddle to medium heat. Add cooking oil of choice, the chicken, kosher salt, and pepper. Cook 4 minutes, mixing a few times.
- Add the blackberry jam, lime juice, soy sauce, hot honey, and lime zest. Cook 4 to 5 more minutes, mixing it all together with spatulas.
- Serve just like this with chives, goat cheese crumbles, and more lime wedges to squeeze over top. Or store in the fridge and use in meal prep such as on salads, wraps, or as a high protein snack.
