- cooking oil of choice
- 2 pounds boneless, skinless chicken thighs or breasts cut into bite size pieces
- 1/2 red onion sliced
- 2 to 3 jalapeno peppers sliced (seeds removed if desired)
- 1 red bell pepper sliced
- 1 orange bell pepper sliced
- 2 tablespoons Caribbean Jerk seasoning blend
- kosher salt, pepper
- 2 tablespoons soy sauce
- 5 to 6 cloves garlic minced
- 1 whole fresh pineapple diced
- 1 bunch fresh cilantro chopped
- 2 tablespoons lime juice
- Optional: store bought Caribbean Jerk sauce
Preheat your griddle to medium heat for a few minutes. Add some cooking oil and the chicken, onion, peppers, Caribbean Jerk seasoning, kosher salt, and pepper. Cook 5 to 6 minutes, mixing together with hibachi spatulas a few times.
Add the soy sauce, garlic, and pineapple plus more cooking oil if needed. Cook 2 to 3 more minutes, mixing together.
Add the cilantro and lime juice, plus more kosher salt, pepper, and Caribbean Jerk seasoning if needed, cook another 1 to 2 minutes. Serve with Caribbean Jerk sauce if desired.
