Blackstone Caribbean Chicken Stir Fry
This is a healthy recipe for the griddle that brings fun, tropical vibes… Blackstone Caribbean Chicken Stir Fry is one of my best flat top grill creations so far.
The flavor combo between the spices in the Caribbean seasoning with the sweet pineapple is incredible!
We were lucky enough to have leftovers and they were even better the next day, so this would make an awesome griddle meal prep recipe!
How to make Blackstone Caribbean Chicken Stir Fry
First prepare your ingredients and place them on a tray to carry out to your griddle.
I have 2 pounds of diced chicken thighs, but chicken breasts work too.
Plus sliced red onion, bell peppers, and jalapeno.
And a whole diced pineapple, garlic, lime, cilantro, and soy sauce..
I am using a store bought Caribbean Jerk seasoning blend, but if you have a homemade seasoning that would be even better đŸ™‚
Preheat your Blackstone or flat top grill to medium heat for a few minutes.
Then add some cooking oil of choice, the chicken, onions, peppers, kosher salt, pepper, and 2 tablespoons of the Caribbean seasoning.
Cook for 5 to 6 minutes, mixing it all together with hibachi spatulas a few times.
Then add the pineapple, soy sauce, and garlic… plus more cooking oil if needed.
Cook another 2 to 3 minutes, mixing as it cooks.
Finally add lime juice and fresh cilantro, plus more kosher salt, pepper, or jerk seasoning if needed.
Another minute or two on the griddle and dinner is done!
Blackstone Caribbean Chicken Stir Fry is just as gorgeous as it is delicious đŸ™‚
You can drizzle some store bought Caribbean Jerk sauce over top if you’d like, but I enjoyed mine just like this.
And I’m usually a saucy girl, so that truly speaks highly of the flavors in this dish.

Equipment
- Blackstone Griddle
- Flat Top Grill/ Griddle
Ingredients
- cooking oil of choice
- 2 pounds boneless, skinless chicken thighs or breasts cut into bite size pieces
- 1/2 red onion sliced
- 2 to 3 jalapeno peppers sliced (seeds removed if desired)
- 1 red bell pepper sliced
- 1 orange bell pepper sliced
- 2 tablespoons Caribbean Jerk seasoning blend
- kosher salt, pepper
- 2 tablespoons soy sauce
- 5 to 6 cloves garlic minced
- 1 whole fresh pineapple diced
- 1 bunch fresh cilantro chopped
- 2 tablespoons lime juice
- Optional: store bought Caribbean Jerk sauce
Instructions
- Preheat your griddle to medium heat for a few minutes. Add some cooking oil and the chicken, onion, peppers, Caribbean Jerk seasoning, kosher salt, and pepper. Cook 5 to 6 minutes, mixing together with hibachi spatulas a few times.
- Add the soy sauce, garlic, and pineapple plus more cooking oil if needed. Cook 2 to 3 more minutes, mixing together.
- Add the cilantro and lime juice, plus more kosher salt, pepper, and Caribbean Jerk seasoning if needed, cook another 1 to 2 minutes. Serve with Caribbean Jerk sauce if desired.
