1poundboneless, skinless chicken thighs (or breasts)cut into bite size pieces
kosher salt, pepper, seasoning blend of choice (I used Blackstone Garlic Butter seasoning)
6 to 8slicesbacon or turkey baconcut into bite size pieces
6 to 8Ole Extreme Wellness Low Carb Wraps (or 7-inch flour tortillas of choice)
3 to 4cupsshredded cheese of choice (I used quesadilla cheese)

Note: This was part of my latest Blackstone Meal Prep Series, so my chicken and bacon were already cooked, see post above for details on the meal prep series. Or follow these cooking directions for the chicken and bacon.Preheat your griddle to medium. Add cooking oil of choice and the chicken, kosher salt, pepper, and seasoning to one side of griddle and add bacon to other side. Cook both 8 to 10 minutes, mixing a few times and remove once cooked to your liking.
This will make between 6 to 8 wraps. Lay each wrap flat and add some of the cheese, chicken, bacon, and a drizzle of ranch to the center. Roll each up tightly, folding the sides in.
Preheat the griddle to medium low. Add a little cooking oil and spread evenly, sprinkle 6 to 8 squares of shredded cheese on the griddle and place a wrap on one side of each square of cheese, seam side down.Note: Picture examples in post above.
Cook 2 to 3 minutes. Use your spatula to flip each wrap (with the cheesy crust) over onto the other side of cheese. Cook 3 to 4 more minutes, flipping a few times and remove when the cheesy crust is crisped how you prefer. Slice in half and serve!
