- 14 ounces sweet potato noodles (Asian section of store or Amazon, can also use rice noodles)
- cooking oil of choice
- 1 pound chicken breasts cut in bite size pieces
- 1 onion diced
- kosher salt, pepper
- 6 to 8 ounces fresh chopped spinach
- 4 to 5 cloves garlic minced
- 1 tablespoon ginger paste or grated ginger (optional)
- 1 8 ounce jar pad Thai sauce, teriyaki sauce, or stir fry sauce
- 1 bunch green onions cut in 1 inch pieces
- yum yum sauce, sriracha
- Optional: chopped peanuts
Boil the sweet potato noodles according to the package directions. Drain and rinse well with cold water to prevent them from becoming mushy.
Prepare the rest of the ingredients, put them on a tray with the cooked noodles and head out to the griddle.
Preheat the griddle to medium heat for a few minutes. Add some cooking oil of choice along with the chicken, onion, kosher salt, and pepper. Cook 3 to 4 minutes, flipping and mixing with hibachi spatulas.
Add the spinach, garlic, and ginger (if using) and cook another 2 minutes, mixing together a few times.
Add the cooked sweet potato noodles (or rice noodles), sauce of choice, green onions, and a little more kosher salt and pepper. Cook 4 to 5 minutes, mixing together with hibachi spatulas.
Serve with yum yum sauce, sriracha, and chopped peanuts if desired.
