Blackstone Chicken and Sweet Potato Noodles
Blackstone Chicken and Sweet Potato Noodles is an easy recipe for hibachi style stir fried noodles on the griddle.
You can find the sweet potato noodles in the Asian section of most bigger grocery stores.
Or order from our good friend, Amazon!
Or feel free to use any rice noodle or glass noodle you can find.
The sweet potato noodles have a very mild flavor, are quite delicate, and with a smooth, somewhat chewy texture.
We were BIG fans!
How to make Blackstone Chicken and Sweet Potato Noodles
Basically I have the sweet potato noodles (or sub rice noodles), some veggies, and a store bought pad Thai sauce.
A store bought teriyaki or stir fry sauce would work too!
I am a home cook looking to cut a few corners most nights, especially with school and fall sports back in session.
So a store bought sauce was MUCH needed this night in particular to get dinner on the table quickly 😉
Boil the noodles according to the package directions.
And then drain and rinse them with cold water to prevent them from becoming mushy.
Prepare the rest of your ingredients and place on a tray to easily carry out to the griddle 🙂
Then preheat the Blackstone griddle or flat top grill to medium for a few minutes.
Add some cooking oil of choice, a diced onion, and pound of chicken cut into bite size pieces.
Season with kosher salt and pepper.
And cook 3 to 4 minutes, flipping and mixing with hibachi spatulas.
Next add some freshly chopped spinach, garlic, and ginger.
And cook about 2 more minutes on the griddle, mixing everything together.
Finally, add the cooked noodles, green onions, and the jar of pad Thai sauce.
Season with a little more kosher salt and pepper as well.
Cook another 4 to 5 minutes, flipping and mixing it all together with the hibachi spatulas.
I like to spread the noodles even in a thin layer to allow some spots on the noodles to get crispy.
Serve Blackstone Chicken and Sweet Potato Noodles with both yum yum sauce and sriracha to complete this fabulous dish 🙂

Also, an optional topping of chopped peanuts adds a nice crunch.

Blackstone Chicken and Sweet Potato Noodles
Equipment
- Blackstone Griddle
- Flat Top Grill/ Griddle
Ingredients
- 14 ounces sweet potato noodles (Asian section of store or Amazon, can also use rice noodles)
- cooking oil of choice
- 1 pound chicken breasts cut in bite size pieces
- 1 onion diced
- kosher salt, pepper
- 6 to 8 ounces fresh chopped spinach
- 4 to 5 cloves garlic minced
- 1 tablespoon ginger paste or grated ginger (optional)
- 1 8 ounce jar pad Thai sauce, teriyaki sauce, or stir fry sauce
- 1 bunch green onions cut in 1 inch pieces
- yum yum sauce, sriracha
- Optional: chopped peanuts
Instructions
- Boil the sweet potato noodles according to the package directions. Drain and rinse well with cold water to prevent them from becoming mushy.
- Prepare the rest of the ingredients, put them on a tray with the cooked noodles and head out to the griddle.
- Preheat the griddle to medium heat for a few minutes. Add some cooking oil of choice along with the chicken, onion, kosher salt, and pepper. Cook 3 to 4 minutes, flipping and mixing with hibachi spatulas.
- Add the spinach, garlic, and ginger (if using) and cook another 2 minutes, mixing together a few times.
- Add the cooked sweet potato noodles (or rice noodles), sauce of choice, green onions, and a little more kosher salt and pepper. Cook 4 to 5 minutes, mixing together with hibachi spatulas.
- Serve with yum yum sauce, sriracha, and chopped peanuts if desired.
