  • Flat Top Grill/ Griddle

Ingredients
  

  • 6 to 8 slices bacon cut into bite size pieces
  • 1 1/2 pounds boneless, skinless chicken thighs or breasts cut into bite size pieces
  • kosher salt, pepper, ranch seasoning blend (I used Blackstone Parmesan Ranch seasoning)
  • 1/3 cup ranch dressing
  • 1 to 2 heads Boston lettuce (depending on size) leaves separated into lettuce wraps
  • 1 avocado diced
  • 1/3 cup shredded cheese of choice

Instructions
 

  • Preheat griddle to medium-low. Add bacon and cook 2 to 3 minutes, mixing with spatulas a few times.
  • Add chicken, kosher salt, pepper, and ranch seasoning. Cook 8 minutes on the griddle, mixing together with the bacon. Drizzle ranch over top and mix together during the last minute.
    Note: No need to add oil because of the bacon grease.
  • Remove and let cool to room temperature. Serve in lettuce wraps topped with avocado and shredded cheese.
