1 1/2poundsboneless, skinless chicken thighs or breastscut into bite size pieces
kosher salt, pepper, ranch seasoning blend (I used Blackstone Parmesan Ranch seasoning)
1/3cupranch dressing
1 to 2headsBoston lettuce (depending on size)leaves separated into lettuce wraps
1avocadodiced
1/3cupshredded cheese of choice
Instructions
Preheat griddle to medium-low. Add bacon and cook 2 to 3 minutes, mixing with spatulas a few times.
Add chicken, kosher salt, pepper, and ranch seasoning. Cook 8 minutes on the griddle, mixing together with the bacon. Drizzle ranch over top and mix together during the last minute.Note: No need to add oil because of the bacon grease.
Remove and let cool to room temperature. Serve in lettuce wraps topped with avocado and shredded cheese.
