- cooking oil of choice
- 4 medium size Russet potatoes diced
- kosher salt, pepper, dry ranch seasoning
- 3 pounds boneless, skinless chicken thighs cut into bite size pieces
- 1 pound bacon cut into bite size pieces
- ranch dressing
Preheat your griddle to medium. Add cooking oil of choice, the potatoes, kosher salt, pepper, and dry ranch seasoning. Mix with spatulas and squirt some water on the potatoes. Cover with a melting dome or lid for 6 to 7 minutes. Remove the lid to mix the potatoes a few times and add more water each time before covering again.
To an empty space on the griddle add a little cooking oil and the chicken, and the bacon to another empty space. Season the chicken with kosher salt, pepper, and dry ranch seasoning. Continue cooking everything for 8 to 9 minutes, mixing with spatulas a few times, but keeping it all separate.
Scoot the bacon to edge of griddle and use your spatula to scrape most of the bacon grease into the grease trap.Note: You could use paper towels to help soak up extra bacon grease after scraping most of it away. Mix everything together and cook a few more minutes, until bacon is done to your liking and potatoes and chicken are cooked through. Drizzle ranch dressing and mix together during the last minute. Serve with more ranch dressing if desired.
