1/2tablespoonground cinnamon
1/2cupdried cranberries
1/4cupDijon mustard
1/4cupmaple syrup
1/4cupwater
Optional: green onions, crushed red pepper flakes, goat cheese crumbles
Instructions
Preheat the griddle to medium for a few minutes. Add cooking oil of choice, the chicken, onions, kosher salt, and pepper. Cook 3 to 4 minutes, flipping and mixing with hibachi spatulas.
Add the diced apples, spinach, thyme, paprika, cumin, cinnamon, more kosher salt, and pepper. Cook 4 to 5 minutes, mixing together with the hibachi spatulas a few times.
Add the dried cranberries, Dijon mustard, maple syrup, water, green onions and crushed red pepper flakes (if using). Cook 2 to 3 more minutes, mixing together with the spatulas. Taste for seasoning, add more kosher salt and pepper if needed.
