Ingredients
  

  • cooking oil of choice
  • 2 pounds boneless, skinless chicken thighs (or breasts) cut into bite size pieces
  • 1 onion diced
  • kosher salt, pepper
  • 2 apples (I used Honeycrisp) diced
  • 5 cups chopped spinach
  • 1 tablespoon fresh thyme (or dried)
  • 1 tablespoon paprika
  • 1/2 tablespoon ground cumin
  • 1/2 tablespoon ground cinnamon
  • 1/2 cup dried cranberries
  • 1/4 cup Dijon mustard
  • 1/4 cup maple syrup
  • 1/4 cup water
  • Optional: green onions, crushed red pepper flakes, goat cheese crumbles

Instructions
 

  • Preheat the griddle to medium for a few minutes. Add cooking oil of choice, the chicken, onions, kosher salt, and pepper. Cook 3 to 4 minutes, flipping and mixing with hibachi spatulas.
  • Add the diced apples, spinach, thyme, paprika, cumin, cinnamon, more kosher salt, and pepper. Cook 4 to 5 minutes, mixing together with the hibachi spatulas a few times.
  • Add the dried cranberries, Dijon mustard, maple syrup, water, green onions and crushed red pepper flakes (if using). Cook 2 to 3 more minutes, mixing together with the spatulas. Taste for seasoning, add more kosher salt and pepper if needed.
  • Serve with the goat cheese crumbles if using.
