Blackstone Chicken Cranberries and Apples
Another fabulous, complete meal on the griddle is today’s recipe that I am sharing… Blackstone Chicken Cranberries and Apples!
I’ve been on quite a fall recipe kick lately… ’tis the season I suppose 😉
This one has some great fall flavors and ingredients like cinnamon, maple, apples, and cranberries!
How to make Blackstone Chicken Cranberries and Apples
I am going with 2 pounds of boneless, skinless chicken thighs cut into bite size pieces.
Also spices like paprika, thyme, cumin, and cinnamon.
And some Honeycrisp apples, spinach, and onion.
The sauce is a mix of maple syrup and Dijon mustard, thinned out with a little water.
And some dried cranberries to add a little sweet tartness to the dish 🙂
Any time I cook on the griddle I prep my ingredients so they are all ready to go.
Place on a tray to easily carry outside.
First preheat the griddle or flat top grill to medium heat for a few minutes.
Then add some cooking oil, the diced chicken and onion, kosher salt, and pepper.
This will cook for 3 to 4 minutes, mixing together with hibachi spatulas.
Next add 2 diced apples, about 5 cups of chopped spinach, more kosher salt, pepper, and some paprika, cumin, fresh thyme, and cinnamon.
And cook this on the griddle for 5 to 6 minutes, combining with your hibachi spatulas.
Finally add the maple Dijon mixture, dried cranberries, crushed red pepper flakes, and green onions.
And cook another 2 to 3 minutes.
Blackstone Chicken Cranberries and Apples is a complete, healthy fall meal on the griddle 🙂
You could add some crumbled goat cheese if desired.

Equipment
- Blackstone Griddle
- Flat Top Grill/ Griddle
Ingredients
- cooking oil of choice
- 2 pounds boneless, skinless chicken thighs (or breasts) cut into bite size pieces
- 1 onion diced
- kosher salt, pepper
- 2 apples (I used Honeycrisp) diced
- 5 cups chopped spinach
- 1 tablespoon fresh thyme (or dried)
- 1 tablespoon paprika
- 1/2 tablespoon ground cumin
- 1/2 tablespoon ground cinnamon
- 1/2 cup dried cranberries
- 1/4 cup Dijon mustard
- 1/4 cup maple syrup
- 1/4 cup water
- Optional: green onions, crushed red pepper flakes, goat cheese crumbles
Instructions
- Preheat the griddle to medium for a few minutes. Add cooking oil of choice, the chicken, onions, kosher salt, and pepper. Cook 3 to 4 minutes, flipping and mixing with hibachi spatulas.
- Add the diced apples, spinach, thyme, paprika, cumin, cinnamon, more kosher salt, and pepper. Cook 4 to 5 minutes, mixing together with the hibachi spatulas a few times.
- Add the dried cranberries, Dijon mustard, maple syrup, water, green onions and crushed red pepper flakes (if using). Cook 2 to 3 more minutes, mixing together with the spatulas. Taste for seasoning, add more kosher salt and pepper if needed.
- Serve with the goat cheese crumbles if using.
