Blackstone Chicken Pineapple Nachos

Blackstone Chicken Pineapple Nachos is a fun snacky dinner recipe on the griddle or a perfect game day snack with a tropical twist!

Ingredients
  

  • 1 pound boneless, skinless chicken thighs (or chicken breasts) cut into bite size pieces
  • kosher salt, pepper, Caribbean jerk seasoning
  • 3 to 4 cloves garlic minced
  • 1 tablespoon olive oil
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice
  • 1 tablespoon brown sugar
  • 4 to 6 sweet mini peppers sliced
  • 1 (12-ounce) bag tortilla chips
  • 2 cups shredded cheese of choice
  • 1 (15-ounce) jar queso (I used queso blanco) warm
  • 1 cup canned pineapple tidbits or fresh diced pineapple
  • Optional toppings: cilantro, lime wedges, hot sauce, pickled red onions

Instructions
 

  • Note: This meal was part of my Blackstone Caribbean Chicken Meal Prep Series, so the chicken and peppers were already cooked for me. See details in post above and the 4 meals I made in this meal prep series. Or follow these directions.
    Put the chicken in a gallon size plastic bag along with kosher salt, pepper, Caribbean seasoning (to taste), garlic, olive oil, soy sauce, lime juice, and brown sugar. Massage bag until combined and marinate in fridge for at least an hour.
  • Preheat griddle to medium heat. Add cooking oil, the seasoned chicken, and sweet peppers. Cook 8 to 10 minutes, mixing with spatulas a few times. Remove or scoot to side of griddle.
    Note: I kept my peppers and chicken separate on the griddle, but you could mix them together if desired.
  • Lower heat to medium low/low and spread chips on either a baking sheet placed on griddle or spread chips directly on the griddle lined with foil or parchment paper. Sprinkle half of the shredded cheese, drizzle queso over top, add chicken, peppers, pineapple, then remaining shredded cheese. Lower griddle lid or cover with lid or large melting dome until cheese is melted.
    Note: Squirt some water on the griddle under the dome to create steam for faster melting.
  • Serve with additional toppings such as cilantro, lime wedges, hot sauce, and/or pickled red onions.
