Blackstone Chicken Pineapple Nachos
Blackstone Chicken Pineapple Nachos is a fun snacky dinner recipe on the griddle or a perfect game day snack with a tropical twist!

How to make Blackstone Chicken Pineapple Nachos
Put a pound of diced chicken in a gallon size plastic bag along with kosher salt, pepper, Caribbean seasoning, garlic, olive oil, soy sauce, lime juice, and brown sugar.
Massage the bag until combined and marinate in your fridge for at least an hour.
I used this Island Stir Fry seasoning in addition to the Caribbean Jerk seasoning.

Preheat your Blackstone or flat top griddle to medium heat.
Add cooking oil of choice, the seasoned chicken, and sweet peppers.
Cook them for 8 to 10 minutes, mixing with spatulas a few times.

I kept my peppers and chicken separate on the griddle, but you could mix them together if desired.

My daughter was here on the day I made these, she requested them for her birthday so you KNOW they are delish!

Scoot the chicken and peppers to the side of the griddle and scrape it clean if needed.
Lower heat to medium low/low and spread some tortilla chips on either a baking sheet placed on the griddle or spread the chips directly on the griddle lined with foil or parchment paper.
Sprinkle half of your shredded cheese, drizzle queso over top, add the chicken, peppers, some diced pineapple, then remaining shredded cheese.

Lower griddle lid or cover with lid or large melting dome until the cheese is melted, squirting some water on the griddle under the dome to create steam will speed along the melting.

Serve Blackstone Chicken Pineapple Nachos with additional toppings such as cilantro, lime wedges, hot sauce, and/or pickled red onions 🙂

Blackstone Chicken Pineapple Nachos
Equipment
- Blackstone Griddle
- Flat Top Grill/ Griddle
Ingredients
- 1 pound boneless, skinless chicken thighs (or chicken breasts) cut into bite size pieces
- kosher salt, pepper, Caribbean jerk seasoning
- 3 to 4 cloves garlic minced
- 1 tablespoon olive oil
- 1 tablespoon soy sauce
- 1 tablespoon lime juice
- 1 tablespoon brown sugar
- 4 to 6 sweet mini peppers sliced
- 1 (12-ounce) bag tortilla chips
- 2 cups shredded cheese of choice
- 1 (15-ounce) jar queso (I used queso blanco) warm
- 1 cup canned pineapple tidbits or fresh diced pineapple
- Optional toppings: cilantro, lime wedges, hot sauce, pickled red onions
