Ingredients
  

  • cooking oil of choice
  • 1 10 ounce package frozen cheese tortellini thawed
  • 1 to 1 1/2 pounds boneless, skinless chicken thighs (or chicken breasts) cut into bite size pieces
  • kosher salt, pepper, seasoning blend of choice (I used Old Bay)
  • 4 to 5 cloves garlic minced
  • 2 to 3 hearts of romaine lettuce chopped
  • 1/2 cup shredded parmesan cheese
  • Caesar salad dressing

Instructions
 

  • Preheat your griddle to medium heat for a few minutes. Add some cooking oil, the tortellini, and a little water to one side of the griddle. Add more cooking oil, the chicken, kosher salt, pepper, and seasoning blend of choice to the other side of the griddle.
  • Cover the tortellini with a melting dome for 5 to 6 minutes. Remove the dome to mix and flip them a few times with hibachi spatulas, add more water each time before covering them again. Mix the chicken as it cooks a few times as well.
  • Set the melting dome aside, combine everything, and add the garlic. Cook together with the hibachi spatulas for 3 to 4 more minutes.
  • Let this cool slightly, then mix it all together in a large bowl with the romaine lettuce, parmesan cheese, , and Caesar salad dressing.
