- 1 pound breakfast sausage
- 2 tablespoons butter cut into 8 pieces
- 6 eggs
- kosher salt, pepper
- 2 to 3 tablespoons chili crisp
- 6 English muffins
- 2 tablespoons spicy mayo
- 6 slices pepperjack cheese
Preheat griddle to medium low. Add sausage patties and cook 8 to 9 minutes, flipping a few times.
Place 6 egg rings on empty space of griddle while sausage cooks. Place a piece of butter in each and once melted crack an egg into each ring. Season with kosher salt, pepper, and spoon some chili crisp onto each egg.
Remove egg rings once eggs are set (about 2 minutes) and use a spatula to flip them. Place a slice of pepperjack cheese over each egg.
Add remaining 2 pieces of butter to empty space on griddle. Once melted spread evenly and place English muffins, cut side down to warm/ toast them for a minute or two.
Remove English muffins, drizzle spicy mayo on bottoms, add sausage patties, egg/cheese, and top of English muffins.
Serve right away or wrap them, store in fridge, and reheat in microwave for 1 minute before serving.
