Preheat the griddle to medium. Add the chorizo and cook 5 to 6 minutes, breaking it apart with spatulas, scrape the chorizo grease into the grease cup. Add green chiles and slowly pour some of the heavy cream.
Use spatulas to contain the cream on the Blackstone and mix with the chorizo. Add more cream a few more times and repeat until the gravy has thickened, about 5 minutes. Season during the last minute with kosher salt, pepper, and breakfast seasoning blend if using. Lower heat to medium low.
Remove the gravy using a scoop or two spatulas, leaving any remaining grease on the griddle, and place in a cast iron skillet or saucepan. Leave it on the griddle to keep warm.
Scrape griddle clean. Add biscuits, cover with a melting dome, and flip them a few times as they cook for 10 to 14 minutes on the griddle.
