Blackstone Chorizo Biscuits and Gravy
Blackstone Chorizo Biscuits and Gravy is certainly not a traditional recipe for this classic dish, but it is totally possible and super easy to make on the flat top griddle.
This is a slightly spicy version using chorizo and adding green chiles, but you could use regular breakfast sausage instead if you prefer.
A perfect camping breakfast recipe or for when you just feel like cooking outside on the griddle.
How to make Blackstone Chorizo Biscuits and Gravy
First place your ingredients on a tray to easily carry outside.
I have a cast iron skillet as well (stay tuned for how we will use that) along with chorizo, green chiles, a tube of jumbo biscuits, a quart of heavy cream, and this Blackstone Lumberjack Breakfast Seasoning.
Preheat your Blackstone to medium heat and start cooking the chorizo.
It will take 5 to 6 minutes and use your spatulas to break it apart as it cooks.
Once it’s cooked, scrape the grease from the chorizo into the grease trap.
Next add the green chiles and slowly pour some of the heavy cream.
Use the spatulas to contain the cream at first.
Mix it all together and you will see the cream slowly thicken into a sauce.
Continue adding more cream a few more times and continue mixing with spatulas.
Until it finally thickens into a gravy.
Reduce the heat on the griddle to medium low and remove this with a large scoop or two spatulas into that cast iron skillet, or a saucepan works too.
Be sure to leave any leftover grease on the griddle.
You can leave the gravy on the griddle off to the side to keep warm and scrape the griddle clean.
Then add the biscuits.
Cover the biscuits with a melting dome.
And let them cook 10 to 14 minutes, flipping a few times.
Remove once they are cooked through and golden brown.

Equipment
- Blackstone Griddle
- Flat Top Grill/ Griddle
Ingredients
- 1 pound ground chorizo sausage
- 1 (4-ounce) can green chiles
- 1 quart heavy cream
- kosher salt, pepper, Blackstone Lumberjack Breakfast seasoning (optional)
- 1 (8-count) jumbo biscuits in a tube
Instructions
- Preheat the griddle to medium. Add the chorizo and cook 5 to 6 minutes, breaking it apart with spatulas, scrape the chorizo grease into the grease cup. Add green chiles and slowly pour some of the heavy cream.
- Use spatulas to contain the cream on the Blackstone and mix with the chorizo. Add more cream a few more times and repeat until the gravy has thickened, about 5 minutes. Season during the last minute with kosher salt, pepper, and breakfast seasoning blend if using. Lower heat to medium low.
- Remove the gravy using a scoop or two spatulas, leaving any remaining grease on the griddle, and place in a cast iron skillet or saucepan. Leave it on the griddle to keep warm.
- Scrape griddle clean. Add biscuits, cover with a melting dome, and flip them a few times as they cook for 10 to 14 minutes on the griddle.
