- cooking oil of choice
- 1 large zucchini (or 2 small to medium zucchini) cut into about 1 1/2-inch chunks
- 1 pint grape tomatoes
- 1/2 tablespoon dry ranch seasoning (I used Blackstone Parmesan Ranch seasoning)
- 1/2 tablespoon Italian seasoning (I used Blackstone Tuscan Herb seasoning)
- kosher salt, pepper
- 4 to 6 cloves garlic minced
Preheat griddle to medium. Add some cooking oil and the zucchini, tomatoes, ranch seasoning, Italian seasoning, kosher salt, and pepper.
Cook 6 minutes, mixing a few times. Add garlic and cook another 3 to 4 minutes, mixing a few times.
