Blackstone Garlic Ranch Zucchini and Tomatoes
Simple summer side dishes on the flat top griddle are a must to keep mealtime easy, this recipe for Blackstone Garlic Ranch Zucchini and Tomatoes is also garden fresh and delicious.
I made this right alongside Blackstone Hot Honey Lemon Chicken Skewers for a complete and easy dinner on the griddle.
Both recipes have the same cook time and with little preparation or fuss, keeping things stress-free.
How to make Blackstone Garlic Ranch Zucchini and Tomatoes

First dice a large zucchini into about 1 1/2 inch cubes.
If you don’t have a large garden zucchini like this, simply use 2 small to medium zucchini.

Then mince plenty of fresh garlic.

Preheat your Blackstone or flat top griddle to medium heat.
Add some cooking oil along with the zucchini and tomatoes.

Season with dry ranch seasoning, Italian seasoning, kosher salt, and pepper.
I used my Blackstone Parmesan Ranch and Tuscan Herb seasonings, but any of your favorite seasonings will work just fine.

Cook this for about 6 minutes, mixing a few times.
As you can see, my chicken skewers cooked right next this tasty side on the griddle.

Finally add some minced garlic and cook another 3 to 4 minutes.

Blackstone Garlic Ranch Zucchini and Tomatoes
Equipment
- Blackstone Griddle
- Flat Top Grill/ Griddle
Ingredients
- cooking oil of choice
- 1 large zucchini (or 2 small to medium zucchini) cut into about 1 1/2-inch chunks
- 1 pint grape tomatoes
- 1/2 tablespoon dry ranch seasoning (I used Blackstone Parmesan Ranch seasoning)
- 1/2 tablespoon Italian seasoning (I used Blackstone Tuscan Herb seasoning)
- kosher salt, pepper
- 4 to 6 cloves garlic minced
Instructions
- Preheat griddle to medium. Add some cooking oil and the zucchini, tomatoes, ranch seasoning, Italian seasoning, kosher salt, and pepper.
- Cook 6 minutes, mixing a few times. Add garlic and cook another 3 to 4 minutes, mixing a few times.
