Blackstone Greek Chicken and Tomatoes is an easy healthy dinner on the griddle. Serve as is or in naan bread with feta & tzatziki gyro style!

  • Flat Top Grill/ Griddle

Ingredients
  

  • cooking oil of choice
  • 2 pounds boneless, skinless chicken thighs (or chicken breasts) cut into bite size pieces
  • 1 pint cherry or grape tomatoes
  • kosher salt, pepper, crushed red pepper flakes (to taste)
  • 6 cloves garlic minced
  • 1/2 tablespoon dried oregano
  • 1/2 tablespoon paprika
  • 2 tablespoons lemon juice
  • 1/2 cup tzatziki sauce
  • Optional: mini naan bread, shredded lettuce, feta cheese

Instructions
 

  • Preheat your griddle to medium heat. Add cooking oil, chicken, tomatoes, kosher salt, pepper, and crushed red pepper flakes. Cook 5 minutes, mixing with spatulas a few times.
  • Add garlic, oregano, and paprika. Cook 4 more minutes, mixing with spatulas. Add lemon juice and mix together, cooking another minute.
  • Serve with tzatziki sauce for dipping or serve gyro style served in mini naan bread topped with the tzatziki, lettuce, and/or feta cheese.
    Note: If serving in naan bread, warm them on the griddle for a few seconds.
