
Blackstone Greek Chicken and Tomatoes
I’ve got one heck of a tasty, healthy flat top griddle recipe today… Blackstone Greek Chicken and Tomatoes!
Just a few simple ingredients, making it perfect for camping or on those busy weeknights when you just want dinner done fast.
How to make Blackstone Greek Chicken and Tomatoes
First, preheat your Blackstone griddle to medium heat.
Add some cooking oil of choice, diced chicken thighs, grape tomatoes, kosher salt, pepper, and crushed red pepper flakes.

Cook this for about 5 minutes, mixing with spatulas a few times.
I am using my 28″ Adventure Ready Flex fold Blackstone that I got from Walmart, you can take this baby anywhere!

Add some minced garlic, oregano, and paprika.
I also added a little more crushed red pepper flakes because, well, we are spice fanatics 😉

Cook this for about 4 more minutes, mixing with spatulas a few times.

Finally squeeze some fresh lemon juice over top and mix together, cooking another minute.

Blackstone Greek Chicken and Tomatoes can be served like this or with warm naan bread and tzatziki 🙂

I had leftovers and they were just as yummy the next day.

Blackstone Greek Chicken and Tomatoes
Equipment
- Blackstone Griddle
- Flat Top Grill/ Griddle
Ingredients
- cooking oil of choice
- 2 pounds boneless, skinless chicken thighs (or chicken breasts) cut into bite size pieces
- 1 pint cherry or grape tomatoes
- kosher salt, pepper, crushed red pepper flakes (to taste)
- 6 cloves garlic minced
- 1/2 tablespoon dried oregano
- 1/2 tablespoon paprika
- 2 tablespoons lemon juice
- 1/2 cup tzatziki sauce
- Optional: mini naan bread, shredded lettuce, feta cheese
Instructions
- Preheat your griddle to medium heat. Add cooking oil, chicken, tomatoes, kosher salt, pepper, and crushed red pepper flakes. Cook 5 minutes, mixing with spatulas a few times.
- Add garlic, oregano, and paprika. Cook 4 more minutes, mixing with spatulas. Add lemon juice and mix together, cooking another minute.
- Serve with tzatziki sauce for dipping or serve gyro style served in mini naan bread topped with the tzatziki, lettuce, and/or feta cheese.Note: If serving in naan bread, warm them on the griddle for a few seconds.
