Ingredients
  

Greek Shrimp Skewers

  • 1 pound jumbo shrimp peeled and deveined
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 1/2 tablespoon dried oregano
  • 1/2 tablespoon smoked paprika
  • 3 to 4 cloves garlic finely minced
  • kosher salt, pepper
  • cooking oil of choice
  • 4 pieces mini naan bread or pita bread

Yogurt Dipping Sauce

  • 1 5.3 ounce container plain Greek yogurt
  • 2 tablespoons mayo
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • kosher salt, pepper

Instructions
 

Greek Shrimp Skewers

  • Pat the shrimp dry and put them in a bowl along with the lemon juice, olive oil, oregano, smoked paprika, garlic, kosher salt, and pepper. Toss until combined and marinate for 10 minutes.
  • Put the shrimp onto 4 kabob skewers.
  • Preheat your griddle to medium heat for a few minutes. Add some cooking oil of choice and place the skewers on the griddle.
  • Cook the shrimp skewers 2 to 3 minutes per side. During the last minute put the naan or pita bread on the griddle to warm them.
  • Serve the shrimp and naan or pita with the yogurt dipping sauce.

Yogurt Dipping Sauce

  • Put all of the ingredients in a bowl, stir until combined, and serve with the shrimp and naan or pita bread.
