Greek Shrimp Skewers
- 1 pound jumbo shrimp peeled and deveined
- 1 tablespoon lemon juice
- 1 tablespoon olive oil
- 1/2 tablespoon dried oregano
- 1/2 tablespoon smoked paprika
- 3 to 4 cloves garlic finely minced
- kosher salt, pepper
- cooking oil of choice
- 4 pieces mini naan bread or pita bread
Yogurt Dipping Sauce
- 1 5.3 ounce container plain Greek yogurt
- 2 tablespoons mayo
- 1 tablespoon lemon juice
- 1 teaspoon dried oregano
- 1 teaspoon smoked paprika
- kosher salt, pepper
Greek Shrimp Skewers
Pat the shrimp dry and put them in a bowl along with the lemon juice, olive oil, oregano, smoked paprika, garlic, kosher salt, and pepper. Toss until combined and marinate for 10 minutes.
Put the shrimp onto 4 kabob skewers.
Preheat your griddle to medium heat for a few minutes. Add some cooking oil of choice and place the skewers on the griddle.
Cook the shrimp skewers 2 to 3 minutes per side. During the last minute put the naan or pita bread on the griddle to warm them.
Serve the shrimp and naan or pita with the yogurt dipping sauce.
