Flat Top Grill/ Griddle
- cooking oil of choice
- 1 (24-ounce) container cherry or grape tomatoes (mine was a variety pack of tomatoes)
- kosher salt, pepper, Italian seasoning
- 2 tablespoons balsamic vinegar
- 1 (12-pack) slider buns (mine were King's Hawaiian that I sliced in half)
- 4 to 6 ounces pesto
- 1 (8-ounce) package fresh mozzarella pearls (or cheese of choice)
- 2 ounces goat cheese crumbles
- 1 ounce balsamic glaze (vinegar section of grocery store or Amazon)
Preheat your griddle to medium heat. Add cooking oil, tomatoes, kosher salt, pepper, and Italian seasoning. Cook 5 minutes, mixing a few times.
Add balsamic vinegar to the tomatoes and cook/ mix 3 more minutes. Add cooking oil to empty griddle space and place the slider rolls cut side down for a minute until toasted.
Spread pesto on bottom slider bun and then add tomatoes (I used my spatulas to transfer). Add mozzarella cheese, goat cheese, balsamic glaze, plus a little more kosher salt, pepper, and Italian seasoning.
Add top slider buns and press down slightly. Cut and serve right away.
