- 3 pounds jumbo split chicken wings
- 2 to 3 tablespoons olive oil
- kosher salt, pepper
- 2 teaspoons chili powder
- 2 teaspoons paprika
- 2 teaspoons garlic powder
- 1 cup buffalo sauce or wing sauce of choice
Pat the wings dry very well and put them in a bowl. Drizzle the olive oil over top and season with kosher salt, pepper, chili powder, paprika, and garlic powder. Toss until evenly coated.
Preheat the griddle to medium high heat for a few minutes. Place the wings in a single layer on the griddle and cook 2 to 3 minutes per side.
Lower the heat to medium low and cover the wings with a 9x13 foil pan or large melting dome. Cook 10 to 15 minutes, flipping halfway through (be careful when removing the foil pan when flipping as it will be hot). Make sure the wings have an internal temperature above 165 degrees.
Put the wings in a bowl with the buffalo sauce or wing sauce of choice, toss until coated and serve.
