1/2poundjumbo shrimppeeled and deveined, cut into thirds
kosher salt, pepper, garlic powder, lemon or lime wedges
4ouncesdiced imitation crab meat
1/4cupmayo or blended cottage cheese
1 to 2tablespoonssriracha
1largeavocado (or two small avocados)
Toppings of choice: spicy mayo, ginger soy glaze (I got mine from Amazon), sesame seeds, chives
Instructions
Preheat your griddle to medium/ medium low heat. Add cooking oil of choice and the tortillas. Cook 7 to 10 minutes, flipping a few times and remove once crisped how you prefer.
Add shrimp to the griddle (mine were cooked already as part of my Blackstone High Protein Meal Prep... details for that in post above... or cook the shrimp at the same time as the tortillas) and add a little kosher salt, pepper, garlic powder, and squeeze some lemon over top. Cook 3 to 4 minutes, mixing a few times and remove to let cool slightly while the tortillas finish cooking.
Put the shrimp, crab, mayo or cottage cheese, and sriracha in a bowl and mix until combined. Put the avocado in another bowl, add kosher salt, pepper, and a little squeeze of lemon or lime. Mash with a fork.
Assemble the tostadas with avocado spread evenly, top with the shrimp and crab mixture, and add toppings of choice such as spicy mayo, ginger soy glaze, sesame seeds, and/or chives.Note: This is part of my Blackstone High Protein Meal Prep Series, check out details in post above!
