- 3 pounds jumbo split chicken wings
- 1/2 cup lemon juice
- 3 tablespoons lemon pepper seasoning
- 3 tablespoons soy sauce
- kosher salt, pepper, crushed red pepper flakes
- 1/2 cup honey
- 3 tablespoons butter
- your favorite hot sauce or wing sauce
- cooking oil of choice
Put the chicken wings in a gallon size plastic bag or bowl. Add half of the lemon juice, 2 tablespoons of the lemon pepper seasoning, 2 tablespoons of the soy sauce, kosher salt, pepper, and crushed red pepper flakes.
Mix together and store in the fridge until ready to cook.
Put the remaining lemon juice, the remaining tablespoon lemon pepper seasoning and soy sauce in a small saucepan with the honey, butter, and hot sauce (amount will depend on your spice preference). Bring to a boil just for a few minutes, stirring a few times. Let it come to room temperature while the wings cook (it will thicken as it cools).
Preheat your griddle to medium heat for a few minutes and add some cooking oil. Add the wings and cook 2 to 3 minutes per side.
Lower the heat to medium low and cover the wings with a 9×13 foil pan or large melting dome. Cook 12 to 15 minutes, flipping halfway through (be careful when removing the foil pan when flipping as it will be hot). Make sure the wings have an internal temperature above 165 degrees.
Serve the wings coated in the hot honey lemon pepper sauce.
