Blackstone Griddle
Flat Top Grill/ Griddle
- 3 tablespoons soy sauce
- 3 tablespoons honey
- 1 tablespoon lime juice
- 1 tablespoon sriracha
- 6 cloves garlic minced
- 1 1/2 pounds boneless, skinless chicken thighs or breasts cut into bite size pieces
- cooking oil of choice
- 1 onion diced
- 1 cup shredded carrots
- 1 17.3-ounce family size microwavable Jasmine rice in a pouch not microwaved
- 1/2 cup water
- 1 cup chopped cilantro
- 1/2 cup yum yum sauce
- Optional toppings: more cilantro, lime wedges, avocado
Put the soy sauce, honey, lime juice, and sriracha in a bowl. Whisk until combined.
Put garlic and chicken in a bowl, add honey lime sauce and toss until combined. Marinate 15 minutes.
Preheat griddle to medium. Add some cooking oil, onions, carrots, and chicken with the sauce. Cook 5 to 6 minutes, mixing with spatulas a few times.
Add some cooking oil to an empty side of the griddle and the bag of rice with water. Cover with melting dome and cook 3 to 4 more minutes, remove dome a few times to mix rice with spatulas adding more water if needed. Continue mixing chicken and veggies as the rice cooks.
Mix in the cilantro to both chicken and rice during the last minute.
I served these in bowls, adding rice first then topping with the chicken and veggies and yum yum sauce. You can add optional toppings such as more cilantro, lime wedges, and/or avocado if desired.
