Ingredients
  

  • 1/4 cup honey
  • 2 tablespoons sriracha
  • 2 tablespoons soy sauce
  • 5 cloves garlic minced
  • 4 mahi mahi fillets
  • kosher salt, pepper
  • cooking oil of choice
  • 1 red bell pepper sliced
  • 1 yellow bell pepper sliced
  • 1 bunch bok choy sliced
  • 1 cup shredded carrots
  • Optional: sesame seeds

Instructions
 

  • Put the honey, sriracha, soy sauce, and garlic in a bowl. Whisk until combined.
  • Pat the mahi mahi dry with paper towels and season lightly on both sides with kosher salt and pepper.
  • Preheat the Blackstone to medium heat. Add some cooking oil of choice, the peppers, bok choy, carrots, kosher salt, and pepper. Cook 2 minutes, mixing with spatulas a few times.
  • Add some oil to an empty space on the griddle and mahi mahi fillets. Cook 8 minutes total, flipping the fish a few times and continue mixing the vegetables a few times. Brush the mahi mahi on both sides with half of the honey sriracha glaze during the last 2 minutes. Add remaining honey siracha glaze to the vegetables, mix until combined.
  • Sprinkle sesame seeds over top before serving if desired.
