Put the honey, sriracha, soy sauce, and garlic in a bowl. Whisk until combined.
Pat the mahi mahi dry with paper towels and season lightly on both sides with kosher salt and pepper.
Preheat the Blackstone to medium heat. Add some cooking oil of choice, the peppers, bok choy, carrots, kosher salt, and pepper. Cook 2 minutes, mixing with spatulas a few times.
Add some oil to an empty space on the griddle and mahi mahi fillets. Cook 8 minutes total, flipping the fish a few times and continue mixing the vegetables a few times. Brush the mahi mahi on both sides with half of the honey sriracha glaze during the last 2 minutes. Add remaining honey siracha glaze to the vegetables, mix until combined.
Sprinkle sesame seeds over top before serving if desired.
