Ingredients

  • cooking oil of choice
  • 1 1/2 pounds boneless, skinless chicken thighs or breasts cut into bite size pieces
  • kosher salt, pepper, crushed red pepper flakes, seasoning blend of choice
  • hot honey
  • 2 lemon wedges
  • 4 sub buns
  • 1 cup shredded cheese of choice
  • Toppings of choice: lettuce, spicy mayo, more hot honey

Instructions

  • Preheat your griddle to medium heat. Add cooking oil of choice, chicken, kosher salt, pepper, crushed red pepper flakes, and seasoning blend of choice. Cook 4 to 5 minutes, mixing with spatulas a few times.
  • Drizzle some hot honey on the chicken, amount depends on your preference. Cook 4 to 5 more minutes, mixing. Squeeze the lemon over top during the last minute.
  • Divide the chicken into 4 piles on the griddle, aim for the same size as your sub buns. Sprinkle cheese over top and cover with a lid or melting dome until cheese is melted.
  • Toast the sub buns on the griddle if desired and assemble the subs with the cheesy chicken, plus toppings of choice such as lettuce, spicy mayo, and/or more hot honey.
Note: We did not add buffalo sauce, but that would be a great addition!
