1 1/2poundsboneless, skinless chicken thighscut into bite size pieces
kosher salt, pepper, seasoning blend of choice (I used Blackstone All Purpose and Honey Jalapeno seasoning blends)
3tablespoonshot honey
3tablespoonsspicy mustard, or mustard of choice
3tablespoonsmayo
1packageKing's Hawaiian Pretzel Slider Buns
4 to 6slicespepperjack cheese
Instructions
Preheat the griddle to medium. Add cooking oil of choice, chicken, kosher salt, pepper, and seasoning blend of choice. Cook 6 minutes, mixing with spatulas a few times.
While chicken is cooking mix hot honey, mustard, mayo, kosher salt, and pepper together in a small bowl. Add half of this to the chicken, mix with spatulas, and cook chicken 2 more minutes. Turn griddle off.
Add cooking oil to empty side of griddle and place pretzel buns cut side down for a few seconds to toast them.
Flip bottom bun over on griddle and add remaining hot honey mustard, chicken, slices of pepperjack cheese, overlapping slightly, and top bun. Cover with melting dome or lid until cheese is melted. Slice and serve.
