- 1 1/2 pounds boneless, skinless chicken thighs (or chicken breasts) cut into bite size pieces
- 6 cloves garlic minced
- 1 cup Italian dressing
- cooking oil of choice
- 1 (20-ounce) bag diced Simply potatoes (or a little over a pound of diced redskin or gold potatoes)
- kosher salt, pepper, Italian seasoning blend
- 1 red bell pepper sliced
- 1 orange bell pepper sliced
Put the chicken in a gallon size plastic bag or container. Add the garlic and Italian dressing, mix until combined, and marinate in the fridge for at least an hour.
Preheat griddle to medium. Add cooking oil of choice, potatoes, kosher salt, pepper, and Italian seasoning. Squirt some water on the potatoes and cover with a melting dome for 5 minutes. Mix a few times and add more water before covering again each time.
Add more cooking oil and the peppers. Cook 2 minutes, mixing together with potatoes using spatulas.
Add chicken with marinade. Season everything with kosher salt, pepper, and more Italian seasoning. Cook 8 more minutes, mixing together with spatulas a few times.
