Ingredients
  

  • 1 1/2 pounds boneless, skinless chicken thighs (or chicken breasts) cut into bite size pieces
  • 6 cloves garlic minced
  • 1 cup Italian dressing
  • cooking oil of choice
  • 1 (20-ounce) bag diced Simply potatoes (or a little over a pound of diced redskin or gold potatoes)
  • kosher salt, pepper, Italian seasoning blend
  • 1 red bell pepper sliced
  • 1 orange bell pepper sliced

Instructions
 

  • Put the chicken in a gallon size plastic bag or container. Add the garlic and Italian dressing, mix until combined, and marinate in the fridge for at least an hour.
  • Preheat griddle to medium. Add cooking oil of choice, potatoes, kosher salt, pepper, and Italian seasoning. Squirt some water on the potatoes and cover with a melting dome for 5 minutes. Mix a few times and add more water before covering again each time.
  • Add more cooking oil and the peppers. Cook 2 minutes, mixing together with potatoes using spatulas.
  • Add chicken with marinade. Season everything with kosher salt, pepper, and more Italian seasoning. Cook 8 more minutes, mixing together with spatulas a few times.
