
Blackstone Italian Chicken and Veggies
A pretty healthy and super tasty dinner on the flat top griddle sound good?! Well, alrighty then… here is my recipe for Blackstone Italian Chicken and Veggies.
This is my first time using these diced Simply Potatoes and I just may never go back to dicing my own again.
So easy and would be awesome to bring along on a camping trip for convenience.

How to make Blackstone Italian Chicken and Veggies
First dice 1 1/2 pounds boneless, skinless chicken thighs (or chicken breasts) and mix with a cup of Italian dressing and minced garlic.
Marinate in the fridge for at least an hour, but you could even do this the night before and marinate overnight.
Then slice a red and orange pepper and place on a tray with the chicken, bag of Simply Potatoes, and Italian seasoning.
You can easily substitute a little over a pound of diced redskin or gold potatoes for the bag of Simply Potatoes.

Preheat your Blackstone or flat top griddle to medium.
Add cooking oil of choice, potatoes, kosher salt, pepper, and Italian seasoning.

Squirt some water on the potatoes and cover with a melting dome for 5 minutes.
Mix a few times with spatulas and add more water before covering again each time.

Add a little more cooking oil to the Blackstone and the sliced bell peppers.

Cook 2 minutes, mixing together with potatoes using spatulas.

Add chicken with marinade.
Then season everything with kosher salt, pepper, and more Italian seasoning.

And mix together with spatulas a few times.
Or get yourself a handsome helper like my husband to help with this part.
This man keeps our yard maintained beautifully, does dishes, and fixes literally everything around the house… but cooking usually isn’t his thing.
So I love when he wants to help even for just a minute.

Cook the chicken and peppers together for about 8 minutes.

Blackstone Italian Chicken and Veggies are gorgeous AND delicious!

Leftovers were just as good the day next for lunch, so this was like two meals for the effort of one!

- Blackstone Griddle
- Flat Top Grill/ Griddle
Ingredients
- 1 1/2 pounds boneless, skinless chicken thighs (or chicken breasts) cut into bite size pieces
- 6 cloves garlic minced
- 1 cup Italian dressing
- cooking oil of choice
- 1 (20-ounce) bag diced Simply potatoes (or a little over a pound of diced redskin or gold potatoes)
- kosher salt, pepper, Italian seasoning blend
- 1 red bell pepper sliced
- 1 orange bell pepper sliced
Instructions
- Put the chicken in a gallon size plastic bag or container. Add the garlic and Italian dressing, mix until combined, and marinate in the fridge for at least an hour.
- Preheat griddle to medium. Add cooking oil of choice, potatoes, kosher salt, pepper, and Italian seasoning. Squirt some water on the potatoes and cover with a melting dome for 5 minutes. Mix a few times and add more water before covering again each time.
- Add more cooking oil and the peppers. Cook 2 minutes, mixing together with potatoes using spatulas.
- Add chicken with marinade. Season everything with kosher salt, pepper, and more Italian seasoning. Cook 8 more minutes, mixing together with spatulas a few times.
