Silicone Egg Rings
- 1 15-ounce box cornbread mix (I used Kruteaz honey cornbread) plus ingredients to prepare batter
- 2 jalapeno peppers seeds removed and diced
- 1 cup shredded Cheddar cheese
- nonstick spray
Prepare the cornbread batter according to package directions. Stir in the diced jalapenos and shredded cheese.
Preheat griddle to lowest heat setting. Place silicone egg rings on griddle, spray well with nonstick spray. Pour batter into egg rings 3/4 full. Cover with melting dome or lid for 14 to 16 minutes or until cornbread is set.
Remove egg rings, gently rocking back and forth if needed. Repeat with remaining batter depending on number of egg rings you have.
