- cooking oil of choice
- 1 1/2 to 2 pounds boneless, skinless chicken thighs (or breasts) cut into bite size pieces
- 4 to 5 ears corn on the cob kernels cut off of the cob
- 1/2 red onion diced
- 3 to 4 jalapenos sliced (remove some seeds if desired)
- kosher salt, pepper, fajita or taco seasoning (to taste)
- 4 to 5 cloves garlic minced
- 1 cup chopped cilantro
- 2 to 3 tablespoons lime juice
Prepare the ingredients and preheat your griddle to medium heat for a few minutes. Add some cooking oil and the chicken, corn, onion, jalapenos, kosher salt, pepper, and fajita or taco seasoning.
Cook 6 to 7 minutes, mixing together with hibachi spatulas a few times. Add the garlic and cook another 2 to 3 minutes.
Mix in the cilantro and lime juice, taste for seasoning and add more kosher salt, pepper, and/or fajita or taco seasoning if needed.
