Blackstone Jalapeno Lime Chicken and Corn
This easy and healthy recipe for Blackstone Jalapeno Lime Chicken and Corn takes only 10 minutes to cook on the griddle!
Gotta love a quick dinner recipe packed full of sooooo much flavor and freshness 🙂
It’s got some Southwest or Tex Mex vibes going on, but it’s a nice change from tacos or fajitas.
How to make Blackstone Jalapeno Lime Chicken and Corn
First cut the kernels off of 4 to 5 ears corn on the cob, depending on the corn size and how much corn you prefer.
Then cut about 1 1/2 pounds boneless, skinless chicken thighs (or chicken breasts) into bite size pieces.
A little more slicing and dicing with half of a red onion, a few jalapeno peppers, garlic, cilantro, and lime.
Put it all on a tray and make your way out to your Blackstone griddle or flat top grill.
Preheat the griddle to medium for a few minutes.
Then add some cooking oil of choice along with the corn and onions.
Also the chicken, jalapenos, and season it well with kosher salt, pepper, and either taco or fajita seasoning.
This will cook together for 6 to 7 minutes, mixing it a few times with hibachi spatulas.
Then add the garlic and cook another 2 to 3 minutes.
Finally some fresh lime juice and cilantro join the party.
Just mix it all together and taste for seasoning… and add more kosher salt, pepper, or fajita seasoning if needed.

Equipment
- Blackstone Griddle
- Flat Top Grill/ Griddle
Ingredients
- cooking oil of choice
- 1 1/2 to 2 pounds boneless, skinless chicken thighs (or breasts) cut into bite size pieces
- 4 to 5 ears corn on the cob kernels cut off of the cob
- 1/2 red onion diced
- 3 to 4 jalapenos sliced (remove some seeds if desired)
- kosher salt, pepper, fajita or taco seasoning (to taste)
- 4 to 5 cloves garlic minced
- 1 cup chopped cilantro
- 2 to 3 tablespoons lime juice
Instructions
- Prepare the ingredients and preheat your griddle to medium heat for a few minutes. Add some cooking oil and the chicken, corn, onion, jalapenos, kosher salt, pepper, and fajita or taco seasoning.
- Cook 6 to 7 minutes, mixing together with hibachi spatulas a few times. Add the garlic and cook another 2 to 3 minutes.
- Mix in the cilantro and lime juice, taste for seasoning and add more kosher salt, pepper, and/or fajita or taco seasoning if needed.
