Ingredients
  

  • cooking oil of choice
  • 1 onion diced
  • 1 red bell pepper
  • 1 to 2 carrots shredded
  • 1 pound ground pork
  • 3 tablespoons soy sauce
  • 2 tablespoons gochujang chili paste (Asian section of grocery store or Amazon)
  • 2 tablespoons honey
  • 4 to 5 cloves garlic minced
  • 1 tablespoon ginger paste or grated ginger (optional)
  • 3 to 4 sliced green onions
  • 4 cups cooked Jasmine rice (I used the microwave rice pouches)
  • spicy mayo or yum yum sauce to drizzle over top

Instructions
 

  • Preheat the griddle to medium heat for a few minutes. Add some cooking oil along with the diced onion, bell pepper, and carrots. Cook 2 to 3 minutes, mixing with hibachi spatulas.
  • Add the ground pork, soy sauce, gochujang, honey, garlic, ginger (if using), and green onions. Cook 7 to 8 minutes, mixing together and combining with hibachi spatulas. Use the spatulas to break apart the ground pork as it cooks.
  • Serve over the rice with spicy mayo or yum yum sauce drizzled over top.
