Blackstone Korean Steak Sandwiches is like a gochujang cheesesteak recipe for the griddle, super simple but packed with tons of flavor!

- 1 pound thinly sliced ribeye or shaved ribeye
- 2 tablespoons soy sauce
- 2 tablespoons gochujang (Korean chili paste in Asian section of store or Amazon)
- 2 teaspoons lime juice
- 1 teaspoon grated or minced ginger
- 3 cloves garlic minced
- kosher salt, pepper
- cooking oil of choice
- 2 tablespoons honey or hot honey
- 1 cup shredded cheese of choice (I used mozzarella)
- 4 ciabatta rolls or buns of choice
- Optional: spicy mayo
Put the sliced or shaved steak in a gallon size plastic bag. Add soy sauce, gochujang, lime juice, ginger, garlic, and a little kosher salt and pepper. Massage the bag until combined and marinate for an hour (or overnight in the fridge).
Preheat your griddle to medium heat. Add cooking oil of choice and the marinated steak with any leftover marinade. Cook 3 minutes, mixing a few times.
Drizzle the honey or hot honey over the steak and cook 3 more minutes, mixing with spatulas.
Divide the steak into 4 piles on the griddle and add cheese over top to melt. Place the rolls or buns cut side down on the griddle for a minute to toast them.
Transfer steak and cheese to the buns, add spicy mayo if using, and serve right away.
