kosher salt, pepper, garlic herb seasoning blend (I used Kinder's)

4mahi mahi fillets
4thin cut lemon wedges (optional)
Instructions
Preheat griddle to medium. Place a small saucepan on the griddle and add butter, garlic, lemon juice, kosher salt, pepper, and garlic and herb seasoning. Mix until melted and scoot to edge of the Blackstone to keep warm.
Drizzle olive oil on mahi mahi fillets and season lightly on both sides with kosher salt, pepper, and garlic and herb seasoning.
Place mahi mahi on griddle (still preheated to medium) and cook 8 to 10 minutes, flipping a few times with spatulas.
Brush a few times with the lemon garlic butter during the last half of cooking. Place lemon wedges on griddle during last half of cooking (if using) and flip them a few times.
Serve mahi mahi with lemon wedges on top and the remaining lemon garlic butter.
