Blackstone Mushroom Swiss Chicken is a low carb, easy dinner recipe for the griddle that you can serve as is or on a Keto sandwich bun!

Equipment

  • Blackstone Griddle
  • Flat Top Grill/ Griddle

Ingredients
  

  • 4 small thin cut chicken breasts (or 2 large thin cut pieces of chicken)
  • 1/4 cup Dale's Marinade and Seasoning (or store-bought marinade of choice)
  • cooking oil of choice
  • 8 ounces sliced mushrooms
  • kosher salt, pepper
  • 6 ounces chopped fresh spinach
  • 6 cloves garlic minced
  • 4 slices Swiss cheese

Instructions
 

  • Put the chicken in a gallon size plastic bag, add the Dale's or marinade of choice, massage the bag until the chicken is coated and marinate in the fridge for a few hours.
  • Preheat the Blackstone to medium heat. Add some cooking oil, mushrooms, kosher salt, and pepper. Cook 5 minutes, mixing with spatulas.
  • Add more oil to an empty side of the griddle and the chicken. Add the spinach and garlic to the mushrooms, mixing with spatulas.
  • Flip the chicken after 4 minutes and add the spinach and mushroom topping to the chicken. Place a slice of Swiss cheese over top and cover with a melting dome for 3 to 4 more minutes.

Notes

I also made a pound of asparagus on the Blackstone for a complete meal. Add oil, asparagus, kosher salt, pepper, and garlic powder to an empty space on the griddle and cook 8 to 10 minutes, turning a few times.
