Blackstone Mushroom Swiss Chicken
This low carb and Keto friendly flat top griddle recipe is fun and easy to make! Blackstone Mushroom Swiss Chicken has just a few simple ingredients.
Another option is to serve as sandwiches on your favorite bun, or a low carb bun if you are doing the Keto thing.
I made it with a side of asparagus for a complete meal.
How to make Blackstone Mushroom Swiss Chicken
I marinated the chicken in Dale’s marinade and seasoning, but really any store bought or homemade marinade will work just fine.
This dinner serves four, so either 4 smaller thin cut chicken breasts, or 2 larger thin cut breasts and just cut them in half to serve.
Then place some sliced mushrooms, chopped spinach, Swiss cheese, garlic, and the marinated chicken on a tray to carry to the Blackstone.
I also had my asparagus, but that’s an optional side dish.
Preheat your flat top griddle to medium heat and add some cooking oil, the sliced mushrooms, kosher salt, and pepper.
Cook the mushrooms for 5 minutes, mixing a few times with spatulas.
Add more oil to an empty side of the griddle and the chicken.
I also added my asparagus at the same times as the chicken and simply seasoned it with kosher salt and pepper.
Turn the asparagus a few times with tongs if making them.
Add spinach and garlic to the mushrooms, mixing with spatulas a few times.
Flip the chicken and load it up with the mushroom and spinach mixture.
Then top with Swiss cheese.
I had my son and his friend help with this part.
Cover with a melting dome or lid for a few more minutes until the cheese melts.

Equipment
- Blackstone Griddle
- Flat Top Grill/ Griddle
Ingredients
- 4 small thin cut chicken breasts (or 2 large thin cut pieces of chicken)
- 1/4 cup Dale's Marinade and Seasoning (or store-bought marinade of choice)
- cooking oil of choice
- 8 ounces sliced mushrooms
- kosher salt, pepper
- 6 ounces chopped fresh spinach
- 6 cloves garlic minced
- 4 slices Swiss cheese
Instructions
- Put the chicken in a gallon size plastic bag, add the Dale's or marinade of choice, massage the bag until the chicken is coated and marinate in the fridge for a few hours.
- Preheat the Blackstone to medium heat. Add some cooking oil, mushrooms, kosher salt, and pepper. Cook 5 minutes, mixing with spatulas.
- Add more oil to an empty side of the griddle and the chicken. Add the spinach and garlic to the mushrooms, mixing with spatulas.
- Flip the chicken after 4 minutes and add the spinach and mushroom topping to the chicken. Place a slice of Swiss cheese over top and cover with a melting dome for 3 to 4 more minutes.
