Ingredients
  

  • 2 pounds boneless, skinless chicken thighs (or breasts) cut into bite size pieces
  • 3 tablespoons pickle juice
  • 2 1/2 tablespoons Nashville Hot seasoning blend
  • 2 tablespoons olive oil
  • 5 to 6 cloves garlic minced
  • kosher salt, pepper
  • cooking oil of choice

Instructions
 

  • Put the chicken bites in a gallon size plastic bag or bowl. Add the pickle juice, Nashville Hot seasoning, olive oil, garlic, kosher salt, and pepper. Mix until combined and marinate in the fridge for a few hours.
  • Preheat the griddle to medium heat for a few minutes. Add some cooking oil of choice and the seasoned chicken bites.
  • Cook 7 to 9 minutes, mixing together with hibachi spatulas a few times. Serve the chicken bites as is or use them for tacos, wraps, salads, or meal prep bowls.
