Equipment

  • Blackstone Griddle
  • Flat Top Grill/ Griddle

Ingredients

  • 3 pounds jumbo split chicken wings
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 tablespoons Old Bay seasoning
  • 2 tablespoons butter
  • Optional: more Old bay and lemon wedges to squeeze over top

Instructions

  • Pat the wings dry and put them in a bowl. Add the olive oil, lemon juice, and Old Bay seasoning. Toss until evenly coated.
  • Preheat the griddle to medium high for several minutes. Put the wings in a single layer on the griddle for 5 minutes, flipping halfway through.
  • Lower the heat to medium low and cover the wings with a 9x13 foil pan or large melting dome. Cook 10 to 15 minutes, flipping halfway through (be careful when removing the foil pan when flipping as it will be hot).
Note: Make sure the wings have an internal temperature above 165 degrees.
  • Add the butter and once melted, toss the wings in the butter on the griddle for a minute. Sprinkle a little more Old Bay and serve with lemon wedges if desired.
