1poundmedium to large size shrimppeeled and deveined
2teaspoonsOld Bay seasoning
1tablespoonlemon juice
8slicesfrozen garlic toast
4 to 6ouncespesto (store bought or homemade)
1cupshredded mozzarella
1cupshredded parmesan cheese
Optional: basil or parsley for garnish
Instructions
Preheat your griddle to medium heat for a few minutes. Add some cooking oil, the shrimp, and Old Bay.
Cook 3 to 4 minutes, flipping and mixing with hibachi spatulas a few times. Mix in the lemon juice during the last minute and remove the shrimp from the griddle.
Scrape the griddle if needed. Place the frozen garlic toast on the griddle and cook 3 to 4 minutes total, flipping a few times.Note: If they are cooking too quickly just lower the heat or move them to the edge of the griddle where it's not as hot.
Once they are lightly golden brown, turn the heat off, spread the pesto on each and sprinkle the mozzarella and parmesan cheese over top. Once the cheese starts to melt, put a few shrimp on each. Garnish with parsley or basil if desired.Note: Use a melting dome if needed to speed up the cheese melting.
