Blackstone Parmesan Pesto Shrimp Toast

I cook a lot on my griddle/ flat top grill (I know… shocker 😉 )… so when I tell you Blackstone Parmesan Pesto Shrimp Toast is in my top 10 favorite griddle recipes, you KNOW they have to be incredible.

Kind of like garlic toast pizza, but a bit on the fancy side with the pesto and shrimp.

You could certainly make these inside without the griddle, but what fun would that be?!

A great camping meal, a fun dinner on the patio, or even serve them as an appetizer.

How to make Blackstone Parmesan Pesto Shrimp Toast

As with any griddle recipe, prepare your ingredients and put them on a tray to carry everything outside with ease.

Whoops, forgot the cheese on the tray… but it’s ok, it happens 😉

First preheat your Blackstone griddle or flat top grill to medium heat for a few minutes.

Then add some cooking oil of choice along with a pound of medium to large size shrimp and 2 teaspoons of Old Bay seasoning.

Cook the shrimp for 3 to 4 minutes, then add some lemon juice before removing them from the griddle.

Scrape the griddle if needed and place 8 slices of frozen garlic toast.

They will cook 3 to 4 minutes total, flipping a few times.

Keep an eye on them and if they are cooking too quickly you can lower the heat and move them to the edge of the griddle where it’s not as hot.

Turn the heat off when they are lightly golden brown and spread each with some pesto.

Then sprinkle some mozzarella and parmesan cheese over each.

You can use a melting dome to help the cheese melt if desired, then add the shrimp onto each.

  • Blackstone Griddle
  • Flat Top Grill/ Griddle

Ingredients
  

  • cooking oil of choice
  • 1 pound medium to large size shrimp peeled and deveined
  • 2 teaspoons Old Bay seasoning
  • 1 tablespoon lemon juice
  • 8 slices frozen garlic toast
  • 4 to 6 ounces pesto (store bought or homemade)
  • 1 cup shredded mozzarella
  • 1 cup shredded parmesan cheese
  • Optional: basil or parsley for garnish

Instructions
 

  • Preheat your griddle to medium heat for a few minutes. Add some cooking oil, the shrimp, and Old Bay.
  • Cook 3 to 4 minutes, flipping and mixing with hibachi spatulas a few times. Mix in the lemon juice during the last minute and remove the shrimp from the griddle.
  • Scrape the griddle if needed. Place the frozen garlic toast on the griddle and cook 3 to 4 minutes total, flipping a few times.
    Note: If they are cooking too quickly just lower the heat or move them to the edge of the griddle where it's not as hot.
  • Once they are lightly golden brown, turn the heat off, spread the pesto on each and sprinkle the mozzarella and parmesan cheese over top. Once the cheese starts to melt, put a few shrimp on each. Garnish with parsley or basil if desired.
    Note: Use a melting dome if needed to speed up the cheese melting.
