Blackstone Peach and Burrata Crostini is an easy yet elegant appetizer recipe for the griddle with fresh peaches, burrata cheese and balsamic!

Ingredients
  

  • 1 loaf French bread
  • 2 peaches (almost ripe works best)
  • olive oil
  • 8 ounces burrata cheese (or fresh mozzarella)
  • kosher salt, pepper
  • balsamic glaze (vinegar section of grocery store), chopped fresh basil

Instructions
 

  • Slice the loaf of bread into 16 slices. Cut each peach into 8 slices, removing the pit.
  • Preheat the griddle to medium low for a few minutes. Add some olive oil and place the slices of bread and peach slices on the griddle, flip both after 2 to 3 minutes.
  • Tear the burrata cheese into smaller pieces and place on each crostini. After 2 to 3 minutes, transfer the peach slices on top of the crostini. Season the crostini with kosher salt and pepper and remove from the griddle.
  • Drizzle the crostini with balsamic glaze and sprinkle the fresh basil over top.
