Blackstone Griddle
Flat Top Grill/ Griddle
- 4 pork chops (mine were bone in)
- seasoning blend of choice
- 1/2 pound bacon
- 2 peaches (can also substitute apples) diced
- 1/3 cup brown sugar
- kosher salt, pepper, crushed red pepper flakes
- 1 tablespoon lemon juice
- Optional: fresh basil or thyme
Season the pork chops on both sides with seasoning blend of choice.
Preheat your Blackstone griddle over medium heat. Use kitchen scissors to cut the bacon into bite size pieces and add bacon to griddle.
Cook 4 to 5 minutes, until the bacon is almost cooked through, soak up some of the grease with paper towels and spread some grease on empty space of griddle. Add the peaches (or apples if using), brown sugar, kosher salt, pepper, and crushed red pepper flakes to the bacon. Add seasoned pork chops to empty space of griddle.
Cook both for about 6 to 8 minutes, mixing the peaches and bacon together and flip the pork chops halfway through. Add lemon during last few seconds to the peaches. Note: If substituting apples for the peaches, they may take a few more minutes, continue cooking while pork chops rest until done to your liking. Remove pork chops once they are 142 degrees internal temp, but let them rest for several minutes to come to the perfect 145 degree internal temp. Serve the pork chops topped with the peach and bacon mixture, plus basil or thyme for garnish if desired.
