Ingredients
  

  • cooking oil of choice
  • 1 onion diced
  • 1 red or green bell pepper diced
  • 1 carrot shredded
  • 1 pound ground chicken
  • 1 tablespoon garlic paste or fresh minced garlic
  • 1 tablespoon ginger paste or fresh minced ginger
  • 1/4 cup peanut butter
  • 1/4 cup hoisin sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 head Boston or butter lettuce
  • Optional toppings: sriracha, chopped peanuts, green onions, lime wedges

Instructions
 

  • Preheat the griddle over medium heat for a few minutes. Add some cooking oil of choice along with the diced onion, red or green pepper, and shredded carrot. Cook 3 to 4 minutes, mixing with hibachi spatulas.
  • Add the ground chicken, garlic, ginger, peanut butter, hoisin, soy sauce, and honey. Cook 4 to 5 more minutes, mixing with hibachi spatulas and breaking apart the chicken.
  • Remove from the griddle and let cool slightly and fill the lettuce leaves with the chicken mixture. Top with chopped peanuts, green onions, lime wedges to squeeze over top, and/or Sriracha if desired.
