Instructions
Preheat the griddle over medium heat for a few minutes. Add some cooking oil of choice along with the diced onion, red or green pepper, and shredded carrot. Cook 3 to 4 minutes, mixing with hibachi spatulas.
Add the ground chicken, garlic, ginger, peanut butter, hoisin, soy sauce, and honey. Cook 4 to 5 more minutes, mixing with hibachi spatulas and breaking apart the chicken.
Remove from the griddle and let cool slightly and fill the lettuce leaves with the chicken mixture. Top with chopped peanuts, green onions, lime wedges to squeeze over top, and/or Sriracha if desired.
